Mango Basil Pork Chops

Ingredients:
- 4 Farm Promise® Pork Chops
- 2 tbsp olive oil
- 1 mango, peeled, pitted, and chopped
- 1 tbsp garlic, minced
- 1 jalapeño, seeded and chopped
- ⅓ cup fresh basil, thinly sliced
- 1 (12 oz) can chicken broth
- 2 tbsp light brown sugar
- 1 tbsp soy sauce
- Salt and freshly ground black pepper
Preparation:
- Heat grill.
- Puree mango.
- Heat 1 Tbsp olive oil in a skillet over medium heat. Add garlic, jalapeño, and basil. Heat for about a minute, or until basil just wilts.
- Add broth, brown sugar, and soy sauce. Bring to a boil, stirring occasionally.
- Reduce heat to low and simmer as you gradually whisk in ½ cup of mango puree.
- Bring back to a boil, then simmer, stirring often, for 5 minutes until sauce thickens and coats your spoon.
- Brush pork chops lightly with olive oil and season with salt and pepper.
- Grill chops until cooked through, about 6 minutes on each side.
- Place chops on plates and top generously with sauce.
