1 Farm Promise® Pork Loin Filet, sliced and pounded into ¼-inch thick rounds
¼ cup flour
2 tbsp olive oil
½ cup white wine
6 tbsp butter
1 tbsp capers
Juice of 2 lemons
2 tbsp flat leaf parsley, chopped
Salt and freshly ground black pepper
1 lb box of pasta
Preparation:
Season pork rounds with salt and pepper, then coat with flour.
Heat olive oil in a large skillet over medium high heat, then add pork and brown, 2–3 minutes per side. Remove pork from pan.
Reduce heat to medium, then melt ½ teaspoon butter in the skillet and cook until butter foams and turns golden brown. Meanwhile, crush capers with the back of a spoon, then add capers to butter and sauté until capers are fragrant, just 15–20 seconds. Add lemon juice and bring to a simmer. Add wine and continue to cook, stirring frequently, until liquid is reduced by a third, about 1–3 minutes. Season with salt and pepper.
Remove your sauce from heat, then add remaining cold butter and mix for about 1 minute, until butter is thoroughly melted and sauce is thick and shiny.
Return pork to pan and toss to coat. Sprinkle with parsley, then serve over fresh-cooked pasta.
